What is more comforting than mashed potatoes? How about Baked Mashed Potatoes loaded with cheese and broccoli, and baked into delicious mashed potato bites that have kids happily eating their vegetables for dinner? My whole family loves these mashed potato bites. I love that they are ready in about 30 minutes and are a nutritious side dish to just about any dinner.

And if you happen to be looking for something fun to serve for St. Patrick’s Day, these definitely bit the bill.

Not many were more proud of their Irish heritage than my mother-in-law. She was a huge fan of all that is Irish, from being an active member of the local Irish club to attending monthly Irish dancing lessons.

Every St. Patrick’s Day the whole family would attend an Irish Mass followed by a brunch she helped organize. There are 6 children in my husband’s family, along with spouses and grandchildren. We had a group of 25 in attendance supporting her every year.

During the brunch, there was Irish singing, dancing, and lots of Irish food served. It was a memorable way to celebrate St. Patrick’s Day to say the least. My mother-in-law is no longer with us, and how I miss her and our “Irish Grandma.”

Nutrition Tip: Roast russet potatoes, [skin on!], with a bit of olive oil and rosemary for a delicious side dish that is filled with more potassium than a banana.

This year Baked Mashed Potato Bites will be on the menu. They fit for a few reasons:

  1. They have a hint of green – the celebratory color of St. Paddy’s Day!
  2. What’s more Irish than potatoes?

Can you freeze Mashed Potato Bites?

Yes! Which is great since they are already in individual servings, make an extra batch and you can pull them out as needed. To freeze our baked cheesy mashed potato bites wrap each serving in press n seal or plastic wrap (we prefer press n seal) and place them into resealable, freezer-safe plastic bags. When you are ready to enjoy them, allow them to thaw overnight if possible, otherwise pop them in the microwave on the defrost setting.

Ingredients

  • 2 medium Russet potatoes peeled, cubed
  • 3 large eggs
  • 1/2 cup shredded sharp Cheddar cheese
  • 1/2 cup chopped broccoli steamed

Instructions

  • Add potatoes to medium pot. Add enough cold water to cover potatoes. Bring to a boil over high heat, reduce heat to medium and simmer 10 minutes, or until potatoes are tender.

  • Preheat oven to 400°F. Spray muffin tin with non-stick cooking spray. Set aside.

  • Combine potatoes, eggs and cheese in medium bowl. Mash until smooth. Gently stir in broccoli. Season with salt and pepper, to taste.

  • Divide into 6 muffin tins for large bites, or 12 for smaller potato bites. Use mini muffin tin if desired.

  • Bake 20 minutes. Serve immediately or freeze for later.

    Can the recipes be printed in grams as well as cup sizes. Also can they be frozen.

      Good morning LouLou! No, I’m sorry, our recipes don’t switch to grams, but I did a quick search and it looks as though 1/2 cup is 100 grams. I hope that helps! And, Yes they can be frozen!
