Tirunelveli Halwa Recipe
This halwa was on my to do list for ages. Finally me and mom made it couple days back and it was a huge hit. I shared it on my youtube channel and it was pretty success. So i thought of sharing step wise pictures on blog too.
About Tirunelveli Halwa Recipe
Tirunelveli is famous for a sweet called, 'Iritu kadai halwa'. Tirunelveli is also known forhalwa, a sweet made of wheat, sugar and ghee. It originated during the mid-1800s at Lakshmi Vilas Stores, which still exist. The art of sweet-making spread to other parts of Tamil Nadu, such asNagercoil,SrivilliputhurandThoothukudi. Tirunelveli halwa was popularised by Irutukadai Halwa, a shop opened in 1900 which sells the sweets only during twilight.
Tirunelveli Halwa Ingredients
Wheat
In the making of tirunelveli halwa we use either wheat, wheat rava or wheat flour. The starch from the wheat is extracted and used to make halwa.
Sugar
caramelized sugar is used to achieve the colour in halwa.
Ghee
Use pure desi ghee for making this halwa. which adds to the aroma and taste.

How to Make Tirunelveli Halwa at Home
Preparing Wheat milk
Soak wheat rava in water for 6 to 8 hours. Drain and take it in a blender, puree till smooth. Now strain this and extract as much milk as possible. Add water to the rava and extract as much milk possible. Now set this milk aside for 3 to 4 hours. Now discard the top liquid. Add 4 cup of water to the milk and mix well.
Making caramel sugar
Take 2.5 cup of sugar in a nonstick pan and add ½ cup of water to it., take ½ cup of sugar in a small sauce pan and add ¼ cup water to it. Now cook the ½ cup sugar till dark caramel is achieved.
Making tirunelveli halwa
Now pour the caramel into the sugar syrup in nonstick pan and mix well. Add the wheat milk to this and mix well. Keep cooking till it gets thick. At this point start adding ghee a spoonful at a time. Mix well. Keep cooking till ghee separates. It will take around 45 mins to 1 hour. Now add fried cashews and mix well. Serve.

Ingredients
- 1 cup Samba Wheat Rava (Broken Wheat)
- 3 cups Sugar
- 4 cups Water
- 1 cup Ghee
- ¼ cup Cashews chopped
Instructions
